Peychaud's is the essential ingredient in a Sazerac cocktail and an indispensable ingredient to have in your bar set up. It was created by Antoine Amédée Peychaud who came to New Orleans by way of San Domingo - the former French colony that is now Haiti. By 1832, he owned an apothecary in the French Quarter where he made his famous bitters.  These bitters gave a little zest to the elixirs he sold at his pharmacy and over time Peychaud's bitters became wildly popular. His recipe of distilled spirits infused with botanicals is still used today. 

Recipe: Sazerac
Add 1 sugar cube and 3 dashes of Peychaud's Bitters to a mixing glass. Crush the sugar cube with a muddler. Then add: 
1.5 oz Rye
Fill mixing glass with ice and stir until perfectly chilled
Rinse an ice cold rocks glass with .25 oz of Herbsaint
Strain Rye into the chilled rocks glass and garnish with a lemon peel
