With five different vineyard sites in the southern Langhe, the Cellario family has been making wine from their estate for three generations. Focused on all natural and organic practices in the vineyard and in the cellar, with a focus on local, indigenous Piemontese grapes, like this white blend. Kept on the skins for 5 days, the hue represents its namesake. It is then aged in amphora for 6 to 8 months before being bottled, without fining or filtration, but don’t worry, it only looks and sounds crazy. On the nose, white flowers and stone fruit open up. The palate is layered with texture, more peach skin, a little bit of mandarin orange and an infinite finish.

Pairings: Soo Café's fried shrimp
