The Doublet family owns three properties in Bordeaux in different subregions. Each property is kept as a separate entity and retains its historic name while making wine in the classic style of the region. This is to preserve the quality and unique character of each terroir rather than blending everything into one generic wine. Chateau Haut Champion is their property in Entre-Deux-Mers, the patch of land between the Garonne and Dordogne rivers known for its white blends ranging from sweet dessert wine to bone dry. They make the latter at Chateau Haut Champion, a textured, citrus-laden wine showing lime and peppery notes up front while finishing with a pleasant foxy tone.
Pairings: Arugula salad with cannellini beans, parmesan, and a lemon-mustard vinaigrette
