At Caparsa winery, Paolo Cianferoni makes wine with old vines and minimal intervention. This certified organic estate was rebuilt when Paolo began his work in 1982 in the heart of Chianti Classico with a respect for nature and maintaining the beauty of his land as the core principles. He keeps production small with the philosophy that if he stays small, he can control everything. Yet it’s a hands-off approach with a keen eye and careful attention to detail. The ‘Caparsino’ is ‘a wine for wine lovers’ according to Paolo. After giving this wine a couple of hours in the decanter, tart raspberry and traditional Italian earth with smoky notes begin to emerge in this young wine.
